I haven’t done a Menu Plan Monday over here yet (I was doing them at my personal blog for a while) so I figured I would start doing them here since it goes hand in hand with my grocery shopping and whatnot.
Anyway, this week I tried to keep it yummy but simple, since I don’t want anything left before we leave for vacation next Monday. I’m doing some cooking early in the week for a few things that will last me all week (fresh loaf of bread, peanut butter bars for dessert, and guacamole dip for snacks and to go with lunches at home). I’m doing pizza twice because, well…it’s easy and I don’t want leftovers. Plus, the pizza on Sunday night will accomadate us, plus a friend who will be staying the night to drive us to the airport early on Monday morning. And really, we just love pizza!
Monday - Chili macaroni skillet. Plus I’m making a batch of peanut butter honey bars, white bread in my bread machine, and guacamole.
Tuesday - Southwestern Chicken Stirfy
Wednesday - Cowboy BBQ Chicken Pizza (w/o the bacon)
Thursday & Friday - leftovers (if enough) and/or breakfast for dinner (to keep it simple and get rid of any food that will go bad before we leave)
Saturday - Microwave Ravioli Casserole
Sunday - Homemade pepperoni pizza with this garlic pizza dough
I am really, honestly excited about trying these new recipes and doing some baking/cooking earlier in the week to last for the entire week. I absolutely love my bread machine! Head on over to I’m An Organizing Junkie for more menus!
